Breakfast of Champions

People always ask me, "What do you eat for breakfast?" and to that I say, whatever my tastebuds are screaming for. Growing up, breakfast cereal whether hot or cold, was how I started each day. It was fast and simple, and never got in the way of me getting ready for school and out the door on time to catch the bus. In today's times, people are crunched for time and are always looking for something quick and easy to get them going in the morning.

Why granola? Oats are a complete food; they contain fat, protein, and carbohydrates and they are perfectly balanced for a healthy diet. Packed with iron, dietary fiber, protein, phosphorous, and manganese, oats are ideal for blood building, digestive health, bone and muscle building, and countless other benefits. Paired with fresh berries, dried fruits, nuts, and seeds, this granola is truly a breakfast of champions. Serve it with fresh almond milk, or simply have it as a snack. It's sure to please. Recipe

Ingredients

2 cups rolled oats

1 cup pecans

1/4 cup pumpkin seeds

1/4 cup sliced almonds

1/4 cup golden raisins

1/4 cup raisins

1/4 cup dried cranberries

1/4 cup dried unsweetened coconut

1/4 cup maple syrup

1/2 tsp cinnamon

1/2 tsp pure vanilla extract

Directions

Preheat oven to 250°. In a large bowl combine all ingredients until well coated with maple syrup. Transfer mixture to a cookie sheet lined with parchment paper or lightly greased with cooking spray and bake for 30 minutes or until dry to the touch. Store in airtight container. Granola stays fresh up to one month.
