Everyday I'm Waffling

I've gotta start my day off right! What does that mean, you ask? Well, it means I need something filling and satisfying. I love to BREAK-my-FAST with something loaded with carbs, GOOD carbs; whole wheat waffles, is one sure way to get this done. I feel it is important that I stress the importance of the quality of ingredients here because whole grains, especially wheat, are often times stripped of their nutrients. As a result, we end up eating something that only appears to be healthy. When it comes to flour, I'm a bit of a snob. I will only use King Arthur flour because they stress quality over quantity, AND they treat their employees with dignity. In case you're wondering, they aren't paying me a dime to say any of this, but if they wanted to sponsor me, I wouldn't turn them down *looks around to see if any of their reps are reading this*😉. Okay, back to the lesson at hand, flour, high quality flour, is the key to delicious pastries, so spend the few extra bucks on yourself, you deserve it! I use their unbleached whole wheat flour for this recipe. You can substitute half all purpose and whole wheat if you prefer.

I love this recipe because it's fairly simple. I will say that I only ate half of the waffle pictured above because of it's size. I had a side of fresh fruit, and topped it with coconut whip. You can top your waffle however you'd like. I hope you enjoy it 😇.

Whole Wheat Waffles

Ingredients

1 tbsp Ener-G egg replacer

4 tbsp warm water

1 cup whole wheat flour

1 cup all purpose flour

1 tbsp + 1 heaping tsp baking powder

1 tsp cinnamon

1/2 tsp salt

2 cups non dairy milk (you may need more, add 1 tbsp at a time until you reach desired consistency)

1/2 cup vegetable oil

2 tsp pure vanilla extract

Directions

Whisk egg replacer with warm water and set aside. In a large mixing bowl, add the remaining ingredients and whisk until smooth, stir in egg replacer. Allow mixture to sit for five minutes before cooking. Prepare waffles according to manufacturer instructions. Top with coconut whipped cream and fresh berries.
